BEET ORANGE ASIAN SALAD

2 cooked beets
arugula, mache and/or mixed greens
feta

SAUCE
sautee one onion in sesame oil
add ginger and 1-2 cut oranges
add 1/4 cup balsamic vinegar and 1/4 cup light sodium soy sauce
simmer down
let cool
mix it all together at the last minute
drink: sauvignon blanc

I really like the arugula peppery flavor with the sweetness of the suace. the touch of feta takes it over the top
The beet salad may also be made without the greens and added to couscous/ bulger/ quinoa.... all of that in a wrap is pretty great as well.
