PEAR BLUE CHEESE SALADE

This is pretty amazing. you may use pecans or walnuts but nuts are not necessary
the trifecta is in the salad pear and blue cheese
the best dressing for this is a balsamic vinegrette which adds to the pears' sweetness

BEET ORANGE ASIAN SALAD

2 cooked beets
arugula, mache and/or mixed greens
feta

SAUCE
sautee one onion in sesame oil
add ginger and 1-2 cut oranges
add 1/4 cup balsamic vinegar and 1/4 cup light sodium soy sauce
simmer down
let cool
mix it all together at the last minute
drink: sauvignon blanc

I really like the arugula peppery flavor with the sweetness of the suace. the touch of feta takes it over the top
The beet salad may also be made without the greens and added to couscous/ bulger/ quinoa.... all of that in a wrap is pretty great as well.

BELEM

There's just something about Lisbon...

DAY 6 wed feb 27th 2013
took train back to Sintra then bus to Cabo de Roca (continental Europes western most point and light house). It was super windy and really cold because the water is so deep in these parts of portugal. Walked north along trails on the coast and inland a little. Made it down to Praia da Adrage. The beach was amazing and empty. The only thing there was a restaurant tucked off to the left of the beach. I was the first one there for lunch but it quickly became half full of Portuguese only.(not bad for a week day in the middle of winter). the food was amazing and the wine list was impressive. Service was super great as well. I sat in the front corner with my back to the room. the entire front of the restaurant is giant bay windows. amazing view. Had a half bottle of Duoro White and ate the best shrimp and clams of my life. It was sunny all day but started to rain for 5 minutes while I was eating and watching. after lunch continued hiking north and got off track because of massive landscape damage by recent storms. ended up in a picturesque town of Almocageme White walls and old dudes chillin on the square. no need to go to greece after seeing this town.. made it all the way to Praia da Macas before taking the bus back.

DAY
DAY 7 Thursday
took it chill all morning. went out to lunch near the hostel and had plain grilled squid. Pretty awsome with just a little olive oil and lemon and salt. took train to Cascais up the river. walked with yolanda from the hostel and a french couple from Cascais to Praia da guincho. super cold but sunny walk. very rocky terrain but developed. walked on bike path the whole way. Could see Sintra's moorish castle from the walk. made it back then went to GoodMorning hostel for dinner with Joao Pinho and yolanda and some italian guy. had grilled chicken but nowhere near as good as the one I got in alfama.

DAY 8. Friday morning/afternoon last day

checked out. went to The Ribera Market. walked up to barrio alto. weather warmer than other days. made myself a sardine sandwich and had a beer on the park above the city. amazing last day. the front bench on the left is where I sat.

Pumpkin or squash indian curry

tried this out looking for something new to do with pumpkins. I thought it was pretty amazing. I gleaned this off of a website
http://simpleindianrecipes.com/yellowsquashcurry.aspx

'Yellow Squash' is a vegetable which I first saw after coming to the US. I was very much attracted by its beautiful colour. This can be had raw in raitas or salad. This recipe is an indian touch given to the veggie and beleive me it works excellent. The same recipe can be used to make many other curries by substituting different veggies for yellow squash like Zucchini Curry, Ashgourd curry, Pumpkin Curry and Bottleguard curry. This goes very well with rice and roti.
Ingredients
Yellow Squash - 1 (cubed)
Onion - 1 (finely chopped)
Green chilly - 1 (minced)
Tomato -1 (chopped)
Ginger garlic paste- 1tsp
Chilly powder - 1 tsp
Turmeric powder -1/4 tsp
Coriander powder - 1 tsp
Garam Masala - 1/4tsp
Coconut milk - 1/4 cup
Salt - to taste
Mustard Seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Curry leaves -5 leaves
Cilantro - for garnish
Oil - 2 tblsp

Method
1. Heat oil in a pan, splutter mustard seeds, cumin seeds and curry leaves.
2. Add chopped onion and green chilly and saute nicely, followed by ginger garlic paste.
3. Add chopped tomatoes and sate till everything forms a gravy.
4. Now add the yellow squash and fry along with turmeric powder, chilly powder, corriander powder, garam masala and salt. Cover and cook till the squash is cooked adding little water as needed.
5. Add coconut milk and let the gravy simmer for few minutes.
6. Garnish with coriander leaves.
